I'm never thought any recipe I make, whether my own or someone else's, is so perfect that it should not be experimented with. And, ultimately, I really just kinda dig playing around with food and trying out new stuff. This time around, I decided to revisit the
Pollo Tropical recipe I invented earlier. It involves a couple shortcuts, but still retains most of the fresh ingredients. Unfortunately, I didn't have any plantains to make as a side dish, so I just stuck with the basic meat and rice main dish.
